Just the last couple days the coolant is coming out of the cap. It's running at 195 to 210 on the highway. Is the cap maybe bad or possibly a hose collapsing after I shut the engine off.

It could be coming from the pressure cap. Could be a leak/start of a water pump going south and it could be a number of other things.
Most auto parts stores have a pressure tester that they will do free.
Take advantage and see where the leak is.
I removed the cap just to check the fluid level. I noticed the rubber gasket ring came out of the cap. I put it back in and put the cap back on. I know it's near 100 degrees today, but the car is running around 210-220 deg. I think just in case, I'll buy a new cap. Is this an item you can get at a local auto parts, or do I need to go to a Chevy dealer for this item? Thanks for the great information.

Mine averages between 210 - 220 most of the time. I've also heard that if you clean the radiator and ac condenser with compressed air to get all the junk out, the car will run cooler. NEXT project !!
