Have you driven it since jacking it up? Mine usually settles down after a few miles.

Weird, I'm usually all the way down within minutes of jacking.
I'm pretty sure you're supposed to see a doctor if it persists for more than 4 hours

My car always sits higher after using a floor jack to lift the car. After driving it a distance, the suspension settles back down to normal height.

Now that's a good one!
Here is a thread on what the heights are supposed to be. You can check your measurements and the slope to see if you're on target.

Sorry, got off topic. To the OP, I like to shine up my exhaust tips but do not like bending over. So I use my low profile jack with a 2x6 and center it under the rear differential. I jack the car up so I can easily sit and polish the exhaust tips. When I lower it, I also notice the increased gap as the car seems to be sitting higher than before, but it goes away after a few miles of driving. Some call it "settling" but whatever it is, it appears to go away shortly thereafter. I wouldn't lose any sleep over it.
