Overheating and no A/C
As far as the AC turning off, I believe there is a self preservation mode that shuts down the AC if the engine temp gets too high.
I went through something similar recently. I had to replace my radiator. All is good now.
Pull the radiator and do a complete clean.
Change the hoses...all of them.
Change the t-stat....you already have done this.
Do a complete system flush and replace w/Dexcool & distilled water
New radiator cap....you already have done this
Do a system "burp"...get ALL the air out
Check to make sure your water pump is working properly (take the cap
off, run the engine at idle to get up to temp and see the coolant is
moving thru the over flow tank.
The above should keep you cool all summer.
My AC stopped working when I had my overheat issue. My radiator was plugged on the inside. (Unknown mileage on the radiator. Car has 252k miles) I replaced the radiator and hoses. I did nothing to the AC and it functions normally now.

...Make sure that you physically/manually clean the outside of radiator vanes (between the vanes) as well. It tends to be one of the most overlooked/ignored maintenance procedures that effect a majority of C5 cooling problems....

My radiator was almost clean, back of my condenser looked good too....front, not so much...
