What would you do?
I had a small coolant leak. Dealer said it was a "cracked reservoir tank." Tank replaced. A few weeks later I brought the car in for an unrelated issue. Picked the car up and on the way home noticed that the car was leaking A LOT of coolant. Brought the car back to the dealer who said it was a "cracked radiator." Brand new radiator later, I drive the car home, pull into the garage and notice that it is still LEAKING coolant. Very large puddle. Obviously brining the car back to the dealer Monday morning, but how should I handle the situation? I feel like I'm getting jerked around here.

If you used credit card, put in a claim... if check, canx it. Report it to the BBB, go on social media and blast them. Don't go back, don't give in or let up, hose them as they hosed you!

I wouldn't go back to the dealer, unless you're covered under warranty or something.
The last time I was at my dealership for repairs, they didn't even put my car back together. I had loose pieces and rattles for over a week until I figured it out. I have such a bad feeling, I vowed never to return.
Find another shop. Ask your local car clubs for referrals. If the Corvette club has a newsletter, it's probably online (PDF), and you can look at the ads from their sponsors.

Sounds like that dealer is using the hit or miss theory of repair. I doubt I would take it back to them unless they agreed to fix the problem at no additional cost. Otherwise, find a shop that has a great reputation for working on Corvettes, whether that be an independent shop or a different dealer. Checking with a local Corvette club is a good idea to get a referral.

You are getting jerked around. I would confront them, tell them they haven't fixed anything for the money spent.
Either that or cut your losses.
Regardless, they'd never pull another coin out of my pocket. I agree with others; find a better repair shop that won't play a guessing game with your wallet.

Try to figure out where the car is leaking coolant before taking it back to the dealer, or wherever you decide to take it. When mine first started leaking a very small amount of coolant, it was from the water pump. I would think they would have checked that first, but they don't sound like they're trying very hard to troubleshoot your car to be honest.
If they convince you to replace anything else, I would ask them to show you where it's leaking before work begins. Might not be a bad idea to ask to see the old parts either after they've fixed the car since they seem somewhat untrustworthy.
