Do you want a C5 or a C6? I thank the 2007 is the better deal.
Model year, mileage and selling price, are poor parameters when deciding on a choice of 2 cars.
Without knowing how well each car has been maintained, there is no way to say which car is the better choice.
To pick one over the other would just be a roll of the dice.
Using just those parameters, I would say that both cars are equal in that there are some good and bad with both. Mileage is not an issue since these motors "WHEN WELL MAINTAINED " can see 200K without issue. Your best choice could be the worst choice if it was not properly maintained. Some leased cars and promo cars, never see an oil change.
without knowing the history its a crap shoot. BTW words are cheap, salesmen are notorious for giving "Alternate Facts "... Hey If the POTUS can lie, you could never take the word of a car salesman.. Only certified : In writing " documentation, should be accepted.
I would ask you which one you like the best. I would then see what information you could get on the one you like the best.. any History or Carfax, documentation. etc. If there is none and you don't care which one, just flip a coin...
About as subjective as I can be, in a effort to offer your some points of view.
I have to agree with Vanover, first you have to decide which version you want. Personally, I could have gone with a C6, but the "no pop up lights" was a deal breaker for me. Love'em or hate'em, it's what makes a Vette a Vette in my eyes. After that, have a certified tech look it over thoroughly. A bit of cash spent now could save you lots later. I bought my 2004 C5 from a GM dealership last year. It came with a bumper to bumper 3 month GM warranty, so I wasn't worried about anything being awry. Their techs had already crawled over the car, with the inspection sheets provided. So far... VERRRRRRRYYYYYYY HAPPY with it.

I'm going to go ahead and disagree with most of the people bringing up value. 2004 Lemans Z06's are already collectible, look at the recent results from Barrett-Jackson. You'd also be getting a better performer with a late C5 Z06, than a stock C7.
Pick the car you want, ultimately it's your toy, but if you want something that will gain value over time, which will be an insane amount of fun, go for the 2004. A standard 2007 vert is also a ton of fun, but a much more common sort of bird.

Two different Corvettes.
One is a cruiser oriented C6 convertible with an automatic transmission and the other is a performance oriented C5 Z06 with a manual transmission and very low mileage. Between those two, my preference would be the C5 Z06.
I cannot comprehend the OP's mind set. Either you want a convertible or you don't Same with the transmission either standard or automatic. These are not features to be wishy-washy about. If he is ambivalent on these two totally different cars how can he expect those of us who ARE particular about what we drive to advise him ? If both of these cars fit his criteria why doesn't he also include a '09 Camaro in the mix too ?

Two totally different animals. If it were me, it would definitely be the Z06.
However, depends upon HOW you plan to use the car. If it is to be a daily driver, you might prefer the vert. Same if you plan to use it as a weekend SUN machine.
If you are looking for a fun car that can be a weekend thrill or see some track use, the Z06 will be hard to beat!

Trying to compare apples and oranges. Assuming, just for the sake of conversation, that both cars have been properly taken care of, the OP needs to decide what kind of vette he's looking for as mentioned above. A cruiser or a performance car. Until he goes one way or the other its just spitting into the wind. Take care!
