Going to switch from oem runflats to nonrunflats. Rims are currently 100% mint with no scratches. Should I expect rims to be damaged when unmounting runflats?

If a tire shop has the right equipment, then there shouldn't be any damage to the wheels. I've had several sets of runflats dismounted and never had any scratches on the wheels. I would ask the shop if they have experience working with runflats and if they don't, find one that does.

... on a serious note though, you shouldn't have any damage done to your wheels by removing the tires... at least let them know beforehand you are picky so they will make someone do it that actually cares and if any damage is done then I would make the shop take care of it
Find yourself a shop that has the latest 'Hunter' touch less machines, then no worries. Last summer I needed some new 22's wheels/tires mounted for my truck. Had night sweats thinking about some kid trying to mount them, and having flashes of a 'prybar' coming into the picture.
Found a great shop to do the wheels, but they also had the latest alignment rig. The new systems mount to your tires, not the wheels. Old systems always left four marks on the wheels from clamping the sensors onto the wheels.
