It might be a clogged fuel vent that makes it kick out early. I had this happen with some of my other cars. I do have the same problem on my 04 vette. However, It is only at certain gas stations that it will do it. I can go to one gas station and it will kick out right away. I can go to another and it will work just fine. Check the fuel vent and if that is fine then all you can do is fuel it slow.
Had a problem similar to this but with another car. When the local Valero opened, it did it pretty much with every car. Turns out it was a problem with thier pump handle or something. Been working great since they fixed it. Maybe try a different station.

Where would the fuel vent be located? To my knowledge all late model fuel systems are closed with no vent to atmosphere unless there is a leak.
I always had issues with the pump stopping, very frustrating. A buddy suggested to turn the pump handle upside down. This has worked great for me, regardless of gas station.
This is not unusual for a C5. I've heard plenty of people mention the filling issue. Never heard of turning the key to on though.
Some just use a slower fill rate or back the nozzle out about 1". Another method is to turn the nozzle 180 degrees so the nozzle is up-side-down. (I haven't tried this).
