I own a converted 02 Z06 and it has a factory top and looks stock. I am in the process of making it look as close as possible to the C4 Grand Sport and I get a lot of compliments on it.
I am in Detroit, which is a huge corvette town, and I have been told that the conversion can be done for $10,000.
Be sure that the conversion is well done. The reason there were no convertible Z06's is that the body wasn't stiff enough for the torque. A conversion requires measures to stiffen the floor after the top fixed roof is removed.

Personally... if I wanted a vert (not a fan of any sort of opening in a roof, I like solid tops) with the performance of a Z06 I would never go the route of chopping up a Z. Just buy a vert and modify it to meet (or pass) Z performance. Cheaper, easier, less concerns if the top will ever leak, and no chop-chop of a somewhat more rare model.
