The good and the bad??

'01 had a bit less power than '02 to '04
'01 has a chance of coming with the bad yellow valve springs, but less likely than the '02 and '03 IIRC.
Otherwise a solid year AFAIK

Some 01's burned a little more oil than other years. They also do make a little less power than later years.
As as far as the power goes, my stock 01 kept up with, and pulled on an 02 without any issue, though the driver of the 02 weighed almost 80 pounds more than I did. With bolt ons is clearly a hair faster than any stock 02-04 car.
I wouldnt trade my speedway white 01 z06 for any other 02-04 z06.

Pretty sure HUD was an option in 2001, but standard in 02-04 Z's.

2001 Z06's didn't get HUD. It was an option on base/vert cars in 2001, but unless it was added, it didn't come on 2001 Z06's.
I was inches from ordering a kit to put it in my z06, but then I drove a friend's 02 and decided it wasn't as big a deal as I originally thought.

I honestly don't know but it was an option in 02 so I figure it was the same in 01.

The 01s had less power but its all things you will do with your first bolt ons. The stock manifolds were a little but they are going to be replaced with long tubes. The 02 cam was a little bigger but again, going to be replaced. The 01 had pre cats and cause a little more exhaust restriction, but going to be changed with headers and xpipe. The valve springs will get changed with a cam. My 01 did not use anymore oil than my 00 ss Camaro. The differences don't really add up to much.
