In 2003, the Anniversary Red cars were the most produced color. Twice as many of those compared to the next most common colors (Black and Torch Red). I don't know the actual numbers of how many are left in the world, but there are plenty of them around. I just bought one myself.

Good luck finding out the number you are looking for. I know of no place where that information is available. I do know that the AE model is not a rare car.
It is unlikely that that kind of data could be collected. The demise of a vehicle is not required to be reported to any government or private party so any number you get will be based solely on speculation. A fair guess is that the number that have died is equal in ratio to the percentage produced, i.e. if 1 AE was made for every 4000 vettes, 1 AE per 4000 vettes has been sent to the wrecking yard.

I'd guess you are about 180deg out, probably 1 of 3000 left, but who knows. I wrote off a car when I was a kid, just canceled my insurance, parted out some stuff, and off to the wrecker. For all anyone knows that car is still somewhere...
As dleibman said, there were a lot more verts made (7,547) in 94U Anniversary Red Metallic than coupes (4,085). But as was also suggested, this was "The Color" to have in 2003. 54% of all the verts and 35% of all coupes had 94U paint.
I believe (and hope) that you are overestimating the number of 2003 Corvettes no longer existing. Hard to believe that 3000 of the 4000 coupes would no longer be in service. I just did a quick search and found 21 Anniversary Red Metallic coupes for sale in the first 97 '03 coupes on one for sale site.

I have one too and agree that they might be better cared for than others with the hopes they become collectible - - but the raw number produced (even the coupes) would suggest otherwise.
I bought mine because it was a little bit distinctive and I loved the colors - - - -I know of no source to indicate the remaining number, but would think 15 years later the number must be in the 3500 range for coupes.
