I'm thinking about installing a new Head Unit with GPS and a Camera in my 99 Coupe. Which model head unit did you use and how easy/difficult was the installation and wiring?

There are so many head units with those options these days. Just stick with the name brands like Alpine, Kenwood, Pioneer, etc.
You have three options when it comes to the radio bezel; custom, Metra, or Vettenuts. If I was doing a double DIN, I would go with Vettenuts as everyone who has one likes it as it's more stock looking than the Metra (Metra is less $ though).
This is my personal opinion, the stock Bose system sux. Don't just replace the head-unit, replace the speakers too. It's pretty easy to run new speaker wire from the new head unit to new speakers.

I just replaced the stock Bose head unit with a Pioneer AVH 3500nex single din. It has a 7" motorized screen, apple care play, or android, back up camera, phone, nav, messages, pandora, CD; EQ. The only drawback is it blocks the center vent. The radio and CD can be played with the screen closed. I left the speakers alone. The sound is much better than the old Bose. I am really happy with this setup. I didn't want to go double din.

I agree with knewblewkorvette, stick with the name brands. I like my backup camera but if I had it to do over, I’d likely omit the Nav option and stick with a smartphone or maybe a standalone Garmin with free lifetime updates for navigation. My Kenwood Excelon DNX891HD is a fine head unit, but nav updates are pricey. Here are couple of pics of mine:

I went with Kenwood and Vettenuts (skip the brackets that break). I wanted 1) volume ****, 2) backup & optional forward cameras, 3) USB, 4) CD (I'm 8-track old), 5) Sirius/XM, 6) MP3 input. Got all of the above for quite reasonable money -- for the head unit, at any rate.
I like the look and feel of the Vettenuts bezel much better than the Metra, and wanted my drink holder with closing lid. Their brackets are inadequate, so don't spend money on them.
If it is not too late to change your mind, I have a Kenwood DNX996XR. This is 4th head unit I've had. I had Pioneer a few years back but I personally found the Kenwood's nicer. For an amp, I recommend the Class D style as these are compact and they can stealthily be installed behind the seat. For a subwoofer, my fav is the JL Audio 10w6v3. I think the 10" is more than adequate but I bet there some out there who will tell you to go with the 12".
I have tried just about every brand through the years. My favorite is Kenwood. I find them easier to use and are very reliable. Make sure to get one with Android Auto an Apple car play. You don't have to worry about GPS and it saves a lot of money. Ise the GPS in your phone and never have to worry about map updates.

Fits in the single din slot, front and rear camera hookups, android and iphone play, can download cool apps for the car, navi, runs my 2 amps and sub/speakers wonderfully. Doing the same, you will either have to trim out the stock bezel or jailbreak the joying unit to shave some pixels off the display and make it line up right but it's THE unit that fits (unintentionally) in the stock bezel.
I'm still going back and forth with getting a double din, I have the console but needs to be painted, and this joying unit. My wife likes watching DVD's when we're on long trips. I'm assuming to get to the SD card slot on the joying to put MP4's on it you'd have to take the bezel off, correct? This is the reason I'm still leaning towards the double DIN, everything is still easily accessible on the front of those.

I think you're right about the Joying's SD card access. BUT it has 2 USB ports, 1 of which I put in the glove box for easy access. So you're able to use a USB flash drive instead of micro SD.
