In regards to the seat belts, I discovered the OEM male portion of the belt didn’t completely latch into the C7 female part on the seat. Double check this connection! The solution: I purchased a used set of female C5 latches and installed those on the seats.
So the seatbelt female latches can just be transferred from the old C5 seat and the seatbelts are good to go? No clearance issues with the center tunnel?

Can the airbags just be gutted/removed? Is there seat material underneath the airbag compartment or is there a hole that would need to covered?

I've got a set of those in my . . . well, my C7 . . . and have have daily driven it for a few years. Excellent seats that are comfortable and hold you in securely. Light years ahead of C5 seats. I have considered buying a set to install in my C5. They are VERY expensive.
The price will definitely separate the men from the boys. lol

Another idea might be to buy a base pair of c7 seats (now that we know it can be done) and convert them over to competition via the aftermarket services that provide this.

Those seats are $2k and the conversion from trunkmonkey is $1900. I paid $2500 shipped for these seats in damn near perfect condition. Just have to wait for the right deal to come along..

Very cool mod and the seats look great in your car. I would encourage you to do a write up of the install for others to refer to should they decide to try this.
I did the same in my car. Picked up a set of 1LT seats for $700. I absolutely love them. Still have some trimming to do but all the C5 belt pieces transferred over.

I removed the airbags to sell them. Since the car didn't come with them, it really wasn't a big deal for me...plus the correct wiring would be a nightmare. Selling them will allow me to recoup some of the cost of the seats as well..

I'm about to re-do the stock seats with new foam and aftermarket covers, but would instead go for C7 seats in a blink! The C5 seats are the only thing I do not like about the car. Approximately zero support .

Only problem for me is I need em in mod red....
There was a set of mod red competition seats for sale a couple weeks ago for $2k..they ended up on eBay, not sure what they sold for..
