So I sold my 2004 Z06 several years ago and been itching to get back into one. There is a super low mileage 03 Z06 for sale, less than 5k miles. I like that the mileage is low, but are there things to look out for that can go wrong with so few miles on a 17 yr old car. Assume to look out for usual like belts, hoses, rubber trim, anything else?

You got it all right on the things to assume to look out for. Any old car you will have to put money into but some more than others and is this low mileage going to cost you more than expected well that possible.
any used car I but, I would push it to its limits multiple times to get some sort of base line on will it hold up. I hate to find out the rear main seal leaks after a week of driving it because it rotted out.
this low mileage C5 will need refurbishing unless already done.
I bought a 4,000 mile '02 Z06 about four years ago. I spent about $2,000 dollars bringing it up to standard. I replaced the original tires, all fluids, and the original valve springs that are a weak spot. Five-thousand miles later there have been no other problems found other than a power window which is standard for a C5.
Guy on a FB group I am a member of bought a Z with 37 miles on it. Rats had nested and ruined the HVAC fan motor and wiring, new tires and I think is still finding things that have failed. Low mile cars are good and bad. The seals and gaskets dry out from non use and age and leak so don't think since the car has low miles it is like new. Honestly I had rather have one with 15 to 20K miles on it. Have any GM dealer to run vin number for maint and recall records and info. to see what has been done, like the column lock recall. Don't mean to be a knot head or throw cold water on your purchase just FYI. Pull the codes using the DIC, hold down options button while pushing fuel button 4 times and they will scroll through the different modules. Good luck with it.

Very similar story here. 4 years ago I bought an '02Z with 5200 miles. All the maintenance (fluids/tires/belts/etc) was up to date. The car just hit 12k miles yesterday and other than changing the oil/filter and putting in a
can of BG 44K injector cleaner in the tank once a year, I have not needed to do any additional maintenance. It seems to have a good bit to do with how the car was stored/maintained over its life.

As many of you know, I bought ours this past fathers day with 56 miles on it. The first thing we did was replace the tires and then flushed all the fuilds, had to replace the a/c compressor and waterpump as the seals were bad. The blower control also had to be replaced and now it appears the headlamp control module as well. I knew when we bought it that it was going to take an additional 4-5k to get it back to life. So far, it's holding true and things are working.
Waking up a car that has been sitting can be fun, and sometimes rewarding however, be prepared going in that surprises are lurking and will surface. I've done several wakings for clients, not just my own till now. We drove it this morning to Cars and Coffee in Corona CA and performed perfectly. I think it now has 190 miles on it.
Didn't know about the DIC procedure, will check mine as well.
My 2000 had under 6000 miles when I bought it in 2017. I put on new tires and changed fluids. Daily drive it 40+ miles a day in the Florida heat. Just rolled over 32000 miles last week, absolutely no problems.
I bought my 01 Z06 in 05 with 6000, its around 10200 now, Guess,I should call the scrap yard. Hell its a 2001 so its **** anyway, Its nothing but doom and gloom for it when I log in here.

That car is the genesis of all the Zo6s to come later. The ‘01z created all the hype that followed. Only bad vibes are from regurgitators that don’t know how to change a radiator hose.
