I’m new to the Corvette World. My wife bought me a 2000 C5 Coupe. It has 28k miles on it. I want to change the oil. I have the AC Delco Oil Filter and Mobil1 5W30 Synthetic Oil. The oil label says 10k miles Not sure if I want to go that many miles. Please advise.
Do what you feel comfortable with. It it is 3,500, 5,000, 7,000, whatever. The bane to engine oil is not letting the car warm up enough to burn off any water vapor that forms. A 20 mile ride minimum every time it's started is a good practice to be in if it hasn't been started in a couple of weeks.
If it is a daily driver, or at least driven fairly regularly, 10,000 miles is no issue with a good synthetic. That is my interval for my cars (and I've had them go well past 200,000). But, if not driven often, 5,000 or once a year is a good schedule.
The Factory service Manual says change oil annually or when the oil monitor indicates time to change, whichever happens first. Most people do not drive their Corvettes enough in a year to cause the oil monitor to ask for a change, therefore annual changes would be most common.
The design of internal baffles in the batwing oil pan is such that the most oil is drained when the car is raised and the pan bottom is LEVEL.

A lot of us have installed a magnetic drain plug in the oil pan, too. I also have one, and highly recommend them, especially when going 5,000+ miles on oil changes.

This is good advice on when to change the oil. I never drove my C5s enough to trip the oil life monitor, but did change it every year befor input the car in storage for the winter.

Yep, the Oil Life Monitor system works pretty well. I go by that.
Welcome to the forum, and congrats on your corvette! I agree with what others have said about once a year, or when the oil system tells you it's time. I hope your C5 gives you many miles of smiles.

I agree with most of the above. Many of us don't put many miles on a C5 to justify a oil change. Instead, we do the recommended yearly oil change.
P.S. You are a lucky man to have a wife like that.
Are you going to trust the marketing label on an oil bottle and some people on the internet who like to use their cars for oil durability testing, or the engineers who designed your car? The car even tells you when to change the oil. Very simple. If you don't put many miles on, then the owner's manual says every 12 months. Oil and filters are not very expensive. Engine parts are, though.

I have read that the internal oil pan baffles need some extra time beyond what a normal oil change requires, and just thought I would pass that on . I have an oil change valve on my pan, so I start there, and by the time I have filled and replaced the new filter, the oil has stopped draining. I had read that 15 minutes is plenty of time, but couldn't say if this is correct advice. All I can say is the pan has baffles, and the oil pretty much runs out like water.
I use the oil life monitor built into the car as a guide, but I also feel the condition of the used verses new oil by rubbing two fingers together, just so I can get some idea of what is going on, but I am aware used oil is toxic. I also have a adequate supply of hand cleaner and paper towels for the task, beyond the usual expected oil and filter.
