Found scat from rat/mouse/squirrel who knows under the hood near and under the valve covers. Besides rat traps or poison, is there any way I can deter small critters from calling my engine bay their home during the week as she sits?

Traps really are the best way to go. Bait with peanut butter and dried fruit and place several in various locations of the garage. If parking for a bit leave the hood open and remove the fuel rail covers also. Be forewarned, they may attempt an expensive invasion into your cars interior. They really like wiring.
Bounce dryer sheets in the engine bay, Irish Spring soap in a dish, mothballs, etc all have been tried before.
though I never tried mothballs.
My detached garage is right across from a cornfield. Come harvest time there are mice everywhere. I set out traps (lots of them, they are cheap) and do what Jack suggested. There is also some items on Amazon to deter mice.
I like that idea. I like the fact that it keeps them whole instead of a mouse trap that squishes them. Delicious in butter and garlic but it takes a lot of them to fill you up.
