If that paint job (is it paint or vinyl wrap?) isn't crazy thorough, you could start by looking at door jambs, engine bay, under carpeting, behind door panels, etc.
You can also look at the RPO sticker in the glovebox for codes, and one of them will be a color code. Pic of that and we can tell you what color it was when it was new.

However, the spiral gray shown in your code was available for 2003-2004, and you say yours is a 2000.
I'd pop your vin into a vin checker to figure out the actual year. There's a lookup table to find out what exact day your car was made as well.
So first post says "don't think this is a stock color" but I think it technically is, just not stock for that car. My guess is factory daytona sunset orange from the C6.
