I don’t intend to recarpet. It’s just to keep the floor safe and easy to clean.

I agree. There are wires and connectors underneath the carpet that could get damaged plus it would look really bad. They have pre-cut replacement carpet available if your original carpet is trash.
In the bed of my old pickemup, a ‘79 F100, Rhino liner made the surface very rough and uncomfortable to the touch. It kept softer materials from sliding around, but made it easier to slide materials with little give, such as metal and hard plastic. Can’t really speak as to noise reduction — no chance I would have ridden around on it.
The Rhino lining could be an alternative to the sound deadening material that sticks on like Dyno Mat? I think it would provide some sound insulation, maybe not that much and also act as a heat barrier for the Heat Soak we all experience. Then I would definitely reinstall the/new carpet.

Wires aren’t a concern. The car is getting completely rewired when the Holley Dominator EFI goes in.
Your car, your choices. If you do go the Rhino route, do please report the results, both photos and a review of noise, temp, etc.
I’ve seen Rhino used for a variety of purposes over the years, sometimes it seemed cost effective, other times not. Will be interesting to see what a cost quote turns out to be.

The cost is the biggest factor for me. I have to replace the entire interior because I'm extremely allergic to mold.
I did just see that Speed Inc sells a full kit, so that is probably what I will use for the cost comparison.
I've done it in a jeep wrangler. It made sense at the time, as it made it easy to spray out the mud that always found its way in there. The offset was that it made the jeep sound like I was driving an empty garbage dumpster around. You heard everything and it was horrible. I paid quite a bit of money to have it done as well, around $1,000 if I remember correctly. you could practically redo an entire corvette interior for that.
I did it to my Grand Cherokee, lined the entire interior. My intent was to help with rust and easy clean out after snow, salt and mud. Super noisy and hot inside, hear every thing. On an off road type vehicle I would have no problem doing it again, on a Vette I see no reason to.

Thanks! This is the type of feedback I was looking for! Thank you for sharing your experience. I'll definitely look more into just replacing the interior. It looks like Speed Inc. sells a full set for just under $800.
