You've got it fairly well covered as far as parts list. Don't forget the install tools, like valve spring compressor, Balancer puller and installer, assembly lube. As far as fluids, you'll need coolant, power steering, and an oil change. Some may recommend a trunnion upgrade for your rockers.

If you buy pushrods beforehand, make sure that the supplier has a good return policy ... you may need to change the length!
You don't mention the keepers/locks. They are likely reusable, but if you are not going to replace them, make absolutely sure that they are compatible with your new retainers.
Replace the lifter trays/guides with genuine GM replacements. This is mandatory! DO NOT use cheap imitations!!!

You might consider:
A new camshaft retaining plate.
If your cam is on the radical side, consider upgrading the roller bearings in your rocker arms. At the very least, consider captive bearings, if not bushings.
Some gaskets are reusable, such as intake manifold gaskets and valve cover gaskets, but due to age (if they are original), you may wish to replace them anyway.
A retrofit kit for a LS3 style timing chain guide.
An oil pressure sender relocation kit, while you have access to the area.
Inspect everything thoroughly, especially the water pump, belts, idler pulley bearings and hoses. These are all common wear items and they should be suspect ... especially if they are original and the car has a lot of miles on it. Regardless of what you decide, consider flushing the coolant.
Retrofitting a 4-corner steam vent kit is something to consider. Either way, make absolutely sure that you know how to properly bleed the cooling system!!!

In addition to the usual tools, ideally, you should have a means to measure the valve spring installed height, so that you can determine if/how many shims you need.
A tool to measure your pushrod length is also helpful, but there are some shade tree methods to estimate the needed length ... assuming that the originals are in the ball park.
A tool to remove the harmonic damper.
A tool to install the harmonic damper. Heating the damper may negate the need for this tool.
A big, manly torque wrench for the harmonic damper bolt.
A valve spring compressor tool.
If it is a radical cam, you will need a degree wheel, a pointer, a piston stop and some clay/Play-Doh. In a perfect world, you should check the cam timing and piston/valve clearance, regardless of the cam profile.

After +/- 100 miles, I always like to change the oil and filter following any invasive engine work.

I probably forgot something, so make a list and check it twice.

This is the timing chain damper for our cars if you have a 01-04 car and for timing chains look at this

Don't for Water Pump, Thermostat, hoses, belts and tensioners if you have not already replaced them. They have to come of too.

Check the things you have to go through to change the cam. Now is the time to change them if they are original.
