Updated Headunit
I'm using these in the doors:
Morel Hybrid MW6 MKII Hybrid Series 6-1/2" woofers at Crutchfield
Audiofrog GS25 GS Series 2-1/2" midrange car speakers at Crutchfield
And in the back -- again, not much choice, if you're going to use the stock enclosures, you're limited to 5.25's, I use these:
Hertz DSK 130.3 Dieci Series 5-1/4" component speaker system at Crutchfield
That said.. the rears in the vert do next to nothing.
I had at one point managed to fit 8" subs in the door with the audiofrogs, but that was a disaster (from a sound perspective, they acutally fit in nicely)

P.s. don't run rear speakers, invest in quality door components and a great 2-channel amp to power them

Personally, not a huge fan of the floating screen, but that's subjective, and pioneer's unit functionally (if not asthetically) if fine. For the rest -- Best bet -- replace everything., As I suggested, easiest and most common route is 6.5 /3.5 in the door, 5.25 in the rear for a convertible.
You'll need an amp. Do all new wiring, from the head unit directly to the speakers, bypass the Blows (tm) DSP. Running wires in the c5 is about the easiest thing you can do. Put the amp in the cargo area or behind the seats. Get a subwoffer. If you don't want to go too crazy now, get a self poiwered slim subwoffer. There are many, many powered enclosures that fit perfectly with a 10 or 12" in the cargo carrier.
The c5 is a great car to play with audio-- it's in a unique posiiton that it's fairly modern, but Chevy didn't run anything through the headunit, so replacing it is really trivial (c6 is similar to that as well).
Again, tons of threads on this, but that's the broad brush strokes of one route you can follow.
