The real prize is the C6 Grand Sport. In the coupe form it is the best track car of all Corvettes. It has all the good bits and a powerful NA engine with less issues. Also a steel frame that can be repaired vs the aluminum that is toast with a hit into a barrier.

They should be night and day different...C5Z is a lot more raw with minimal nannies.
I autocross a C5Z and DD a lot. I was able to autocross a C7 GS...the amount of tech and suspension tuning you can do is GREAT in the C7 GS and makes people a "good driver". The C7Z just adds power on top of the GS.
I'm torn between liking a minimalist car like my C5Z but also see the benefit of the C7 technology and creature comforts...
I don't have a C6Z06 to compare but I would like to drive one or do a review on the car.
I know the C6Z06 has a better chassis with the hydroformed aluminum I believe (I could be wrong) and the LS7 which is what makes that car special outside of the chassis and suspension.

I've heard this as well; the reliability a dry sump LS3 makes it super reliable. Having a steel frame is good for repair depending on the damage and cost however, steel comes at a weight penalty vs the C6Z06/LS7. I'm not even sure what the difference in weight is between them. All I know is that for occasional track day/auto X not a big deal but if you're someone doing it for competition the aluminum frame would be optimal for weight savings.

I hear that opinion often between the minimalist approach of the C5Z and enjoying the tech of the C7. I hear a lot of people who sell their C5Z06's regret it and often gat back into another one. Even after owning a C7. Pretty cool the car is that good 20 years later.
