While white is not a top color red is a popular interior choice due to the 53 corvette.
From the above link, there were 14,173 convertibles made in 2001. 1047 of those were Speedway white.
9823 had a black top, that's 69.3%. This is the inexact part- 69.3% of 1047 is 726 convertibles that were likely white with black tops. The uncertainty there is the combination may have been a package or some other reason the percentages may not align. So 726 is just a swag.
Further numbers from the registry show 707 convertibles had a red interior. That's 5% of the run and if we take 5% of 726 that's 36. (With an additional layer of uncertainty.)
4896 were 6 speeds, that's 35% x 36 = 13.
So maybe in the neighborhood of 13 of that exact combination. Someone better with statistics could probably give you a range.
It would take a significant amount of research around the world to find out how many of those cars are still out there that had under 20k miles the last time the title changed hands.

That being said, white convertible, red interior (especially if it’s a torch red/mod red “bright red”), a manual trans and black top would be a great spec! Congrats on owning a cool Vette! But please stop worrying about rarity in any capacity.
