I'm looking at a 01 Z06 and read that the earlier cars were more prone to oil consumption issues. I have the vin of the car I am looking at but after searching it seems any resources (C5registry etc.) that this forum and others mentioned to determine build are down.
By way of basic math and knowing the start and end sequence numbers for 01's the car in question is about 86% into the total 01 corvette production run (all trims). Is this a good approximation and safe to consider a late car? Were Z06's somewhat evenly spread throughout the run or were there blocks of cars made of different trims?

The sticky post Definitive C5 Info Thread gives some details on excessive consumption in certain circumstances. If your expected use case falls outside those circumstances it's a non-issue for you.
Based on your comment "read that the earlier cars were more prone to oil consumption issues" I think you are more concerned than you need to be but read the info in the sticky and you'll have a clearer picture about the potential issue.
While not a Z06, I have had my 2000 Coupe for over 6-years and have never detected any sort of excessive oil consumption. Vehicle has 32k and admittedly I do not push it hard often or for any length of time. The RPMs do not stay in the upper range for extended periods. Just some perspective and hope this helps. Good luck in your quest.
