Heard through the grapevine that Pirelli will be introducing a 315/35ZR17 tire too (Porsche GT2 fitment). I believe Michelin has this size now available too. Most definitely stay with a 35 sidewall aspect.

Dugmole, realized we never really answered your question. Assuming what you want to know is "can a 305 tire fit on the stock Z06 rim and are people running that?", the answer is Yes, but only at the track! . Hoosier makes two DOT-legal race tires (one for autocross, the other for road racing), both of the sized 305/30-18 only. I am not aware of other 305-18 fitments/mfrs.
There are a number of 315/30-18 fitments for the street, but this size is probably at the limit of the 10.5in. OE rim. (check with an outfit like http://www.tirerack.com). Rubbing would not be a problem.
