So much depends on the driver I don't think you have a good test there. Comparing stock vehicles the Z06 just develops a lot more RWTQ and can usually easily pull away from a stock C5.

Hard to tell. I gather you are not the original owner, so you may have to track down previous owners and see if they can give you some insight. Could be the drivers too.
first off.....a Z06 (model) is a C5 (generation). it should read Z06 vs coupe or vert
Now to your question.. my friend who has a stock z06 and I tried the same thing many times even switching cars to see if it was the driver... At the time, all I had was the air and exhaust done and it was always close (about a car length) but never closer... top end it should even out so he should be taking you off the line to about 60-80.. after that you shouldnt see much pull and I believe that top end the coupes are actually faster 170mph (z06) vs. 175 (Coupe or vert) Something like that
Provided your only mod was a cat-back the 02 Z should beat you by a good three to four car lengths. My money is on driver skill.. ( or lack thereof ) ..
