in my 01 the switch is in the glove box, not sure about the 00 but maybe the dealer can put one in if it does not have one,
beside that I would move the seat as far back as you can
good luck
Mid-year 2000 they put the switches in to turn off the passenger side air bag. A dealer may be able to reto-fit one. Might want to inquire. Glad to see other responsible parents think about this kind of stuff.

If your car was made before the air bag cutoff switch was installed in the '00 model year, you can buy a retrofit kit from most dealers. Call Bob at Fichtner Chevy for more details.
Has anyone ever installed one of these kits ? I wonder if these are for DIY owners or dealers and profesionals only. I'm just a little nervous about mesing with the air bag.

Any person w/ basic skills can install the A/B cutoff switch. First of all, I doubt if any dealer will install it. They do not want the liability.
It took me a couple of hours to do this install. I took my time and followed the link already noted by Zilla. Good luck--go ahead and DO IT....
The posts above have good info.
I ordered the kit from Fitchner about 5 months ago and got it with no delays.
I am not the most handy person but I installed it with my Dad's help. It took a few hours. You don't do anything directly with the airbag so don't worry about that part (you are installing a bypass; not sure if I can explain this well).
My install was on a 2000 also.
My dealer wouldn't install it.

I installed one in my 2000 Coupe. Buy from Ken Fitchner, it may take 3 or 4 weeks like mine did. I believe the VIN went to the government and the kit was made for my car. Email me and I'll give you all the info you need. The directions are pretty clear, you just get a little nervous taking the glove box out. The day you do the install I'll even give you my phone # and clear up any questions right away.
It's not hard, just sounds that way! Now my 3 year old rides with me and it was one of the best installs I ever did

I did my own. Parts Bob (Fitchner Chevy's parts guy) can give you the details on the install. Mine is a 99, and I was thrown a little by the connector. The link that Zilla posted is what threw me. Please take the time to read this thread over on CorvetteActionCenter.com!!!! I went through hoops because the instructions on 97Vette.com were incorrect for my car.
