There is a car I am looking to buy but I was making sure this stuff was factory... wood grain paneling around the dash? and very light gray almost white color interior?
Also how rare would this make a 97 Fairway Green A4?

Wood grain paneling is not a factory option. It is an aftermarket piece. There was a gray interior offered, but I would not say it was white looking. Maybe it has faded?

I agree with JD and Zilla - for sure no wood grain trim was ever a factory option on a 97 C5. For what it's worth, there were only 9752 97's built, 155 were Fairway Green and there were only three interior colors offered - black, firethorn red and light pewter.
So I would also have to agree that it must be the light pewter, that has somehow faded or dried out. If it's anything else, it must be aftermarket.
