I just bought some new drilled and slotted rotors. I'm going to paint the center of them black to add a little touch. Anyone have any suggestions to how many coats of high temp paint I should use?

I would reccomend 2 - 3 coats. You would see rust on them with just one coat.
I painted mine Chrome from Dupli-Color. So as to make them look like zinc coating. Worked well I get lots of compliments on them. They make the wheels look better than with the black. Two coats did it for me. Once the heat hit them they turned more grey than chrome but still better than the black. My .02
Can some one tell me the steps to painting my calipers, or point me in the right direction? I want the calipers red, so should i try it on my own or just buy the Z06 calipers?

There are several ways to go about painting your calipers. I left mine on the car and brushed on a caliper paint. Others have taken the calipers off and sprayed them (some have left them on and sprayed them). You can check out this thread I started with a link to some pics of my work.
Further down the thread is a message with the type and color paint that I used. Hope this helps. It really isn't hard to do, and a lot cheaper (and easier) than replacing the calipers with the Z06. Go for it, you can do it!
