Don't know too much about child seats but last night on TLC, they showed Chip Foose redoing this guy's child seat in his muscle car to look like a carbon fiber racing seat. He even matched the leather to the one inside the car. Pretty cool!!! Just an idea...
Oh, make sure your vette has the airbag cutoff switch turned on if you are going to have a kid in the vette.

I have a Porsche brand booster seat for my kid when he rides in the vette. He loves it!!!! Make sure you disable the airbag. The seat fits perfectly- I do put towels underneath and behind the seat. This is to make certain the booster seat leaves zero marks on the vette seat. Good luck.
I don't know about it fitting well, but awhile back there was a thread here that included a Simpson racing style seat. It looks as cool as any kid's seat can. Either search the Forum or Google, and remember to turn off the air bag.
We have 2 child seats, both Cosco, and they both fit well in our sport seats. One is an Eddie Bauer model. The other is Cosco model # 22-739-WAL, this one fits best.
We recently had a air bag cut-off switch installed in our 2000 coupe. After doing considerable research on the subject I decided that my 3 1/2 year old son was not going to ride in the vette until the air bag was disabled. GM makes this cut-off switch specifically for the 2000 Corvette and a new passenger side seat belt (color matching) is included. We ordered the part from our local dealer and made an appointment to have it installed. We made the two hour drive to the dealer and while we were checking in the vette, the service manager informed me that they could not do the install due to liability issues. I reluctantly paid for the part, (more than a little PO'd that I had just driven 2 hours for nothing).
I had my local mechanic (one hour drive) install the cut-off kit. It was about a 2.5 hour install.
