I just bought a Diablo Predator. I see that there's a performance tune and the options of changing shift points, fan switches, etc.. As a novice do I just stick with the performance tune and not mess with the more in depth options? And if so what will the performance tune change/do? Thank you

There is no 'need' to adjust any of those parameters, until you feel the desire to do so.The Performance tune, in addition to adding 10-15rwhp and some good low end torque and improved throttle response, will also firm up your part and WOT shifts and maximize the shift points for best acceleration and mileage.
If at any point you would like to firm up or soften the shifts at part or wide open throttle, you have the option to do so.
The only time you'd need to lower the fan settings any further,(they too are lowered in the performance tune), would be if you installed a cooler thermostat.
As you become more comfortable using the tool, you can use the fuel/timing parameters to dial in the tune based on info you gather while monitoring the real time data.
