I just checked my car with a scanner and my long term fuel trims are -(10-11). What do I need to do with LS1 edit and how much is this hurting performance?

Having the LTFTs at -10% or -11% is not causing any performance loss, and you will not tune the PCM to yeild more HP based on the negative LTFT value.
You want the LTFTs to be slightly negative, such as, -5% to 0%, but being at -10% is of no concern. You could modify the MAF table with LS1Edit and lower all the the MAF table values by 5% (multiply thru by 95%), but you will not increase the HP. You might end up at about -3% LTFT but no HP increase.
You are at the point where you can now tune for WOT with a wide band O2 sensor.

Any derivation from 0, + or -, in the fuel trims has an effect on timing (perceived load). So either tuning to change the fuel trims values or tuning the timing, or both, would be the best path, for optimizing PE mode.
