To check the tranny fluid, you have to jack the car up and have it level -- not perfect, but close to level. Remove the fill plug on the tranny, stick you finger in there and the fluid should be about ready to spill out. When filling the tranny, you basically fill it until fluid comes out the hole.
If you are getting the clutch changed out, make sure they replace the slave cylinder/throwout bearing with an '02 Z06 slave. You also should replace the master with the Z06 master and consider the drill mod which should help you from having the sticking clutch syndrome. Make sure they replace the pilot bearing too.

Also, I'd get a remote external bleeder and install it at the same time. It will make bleeding clutch a snap next time you need to bleed the clutch for some reason. I got my external bleeder from Shawn at LAPD.
