Just wondering what temsp ou are seeing crusin g with your 160 t-stats? I went from a 180 to 160. Car idles @ 175 with no fans and cruises at about same in 87 degree temps. I set my fans to come on @ 180.
I messed around with half a dozen thermostats before I got one that I was happy with. The "rating" is BS. I had to test each one on the stove. I had one "180" that opened at 195, a "187" that opened at 195, two stock 195s that opened at 194 and 196, and two 160s that opened at 160. Maybe your "180" was opening at 195. You really need to test each one, unless you got lucky and found one that suits your needs, regardless of the rating.
I also tried several, some were junk. I bought one from a sponsor here, it opened correctly, but wouldn't close when it should, ended up still flowing at 120. I sent it back they said it was operating correctly.
I bought a Hypertech 160 and it works perfectly. It starts to open at 160 and is full open at about 175. My ECT stays at 175 (cold, winter) to 190 (hot, summer, stop and go.) with fans reset.

Ditto on that. Did the stove thing too. Went with a 170 degree stat that began opening at 170 degrees. Car cruises highway at 179 degrees when colder, 181 to 183 when its cool outside (about 60 degres) and with summer temps of 80 to 95 it cruises 185 to 189 degrees. Of course, when in traffic it climbs up slowly like everybody elses temps. First fans (low speed) set to come on at 195, second speed comes on at 205. Haven't seen anything higher than 215 this year with/without the A/C on in the worst traffic. I Like the slightly higher stat (170) because it maintains the engine temp closer the optimum temp for performance/economy/emissions.

I did it with a Hypertech programmer, which increases power, and it can reprogram for different gear ratios, different wheel sizes, and auto shift points.
Why swap out Tstats? It'll only affect at what temperature the the coolant starts flowing thru the radiator. My experience with lower temp tstats has been that it runs at the same temp but has trouble warming up in the winter. If overheating is an issue, or even running too hot, wouldn't lowering fan turn on temps be a better solution than a lower Tstat?
The damn thurmo. dont tell the fans WHEN to come on!!! These guys with the hyper tech,.......Done GOOD!!! (With the *160 thurmostat ) ( and It will "promt you for witch one you have) ( and mine has worked FINE for 6 years!).............OH, OH YA and one of the most common problums with OVERHEATING is OUR radiators clog, ALL of them need to be cleaned from time to time a lot of guys pull them right out of the car! I just use a SHOP VAC every time I change the oil!

Yea, but with the hypertech programmer, you can tell the fans when your Hypertech thermostat is set to open. I be one of those "guys".

I do HPDE and a 1/4 sprints now and then. I like to keep ECT below 200. Easier to do with a 160 in summer..
