My power steering pump whines and moans when crusing and gets worse when I turn.... I replaced the pressure hose due to a leak but the reservior never went dry... now the pump makes noise.... what exactly goes bad on the pump ??

You may still have air in the system that was not purged. Not good. I'm at work right now and don't info on purging with me here. Maybe someone else can jump in here.

If it's like most power steering pumps, there are little fiber vanes on a rotating shaft, which when allowed to run dry for any length of time (it doesn't take much), they will score the insides of the internal walls of the pump, therefore allowing "blow-by" of PS fluid.....acting and sounding almost as if it didn't have enough fluid, even though it probably does. The only cure for that is to replace the pump.
try this first. you are using the right p/s fluid? it makes a diff. fluid full not over run at idle slow turns lock to lock center wheel , shut off check level again . if the fluid looks like a sloe gin fiz ya still have air in FLUID let it sit 15 min. or until no fiz again correct fluid. pump can scour but usualy after running the system dry a few times and they can be saved with diff. fluid some times. the time saver on bleeding any thing is not to PUT air in system. shake up brake fluid and you will see what i mean
