I was told that my 2000 C5 has the Z-56 suspension. What is that and how can tell if I have it? I know that if I push and hold the traction control button for 7 sec. "Performance Driving" will appear on my dash read out.

Those are two different things. More than likely they meant that you have the Z51 suspension which is the "performanc" one with a little stiffer springs and larger swaybar.
The traction conrol is really a function of the Active handling package where you can hold the button down for 5 to 7 seconds and get into "Competitive mode" where traction control is turned off but active handling is still on. Competitive mode can be a lot of fun! Just be careful.
If you don't have the window sticker for your car, there should be a list of the "options" that your car came with. One newer ones I believe it is on the inner lid of the center console. Prior years it was either in the glove compartment or on the underside of one of the panels in the hatch area (drivers side I believe).
This will be a series of three character codes which correspond to the options that were available for your model year (the codes themselves don't always change from year to year but the ones that are available in each year sometimes do).
Hope that helps. If all else fails you can order a build sheet and/or window sticker from the corvette museum.
