The stock thermo is good anywhere in the country. The engine will operate at a proper temp with the stock thermo. There is nothing to be gained by switching to a lower thermo.

Over the past weekend I went from a 180 back to my 160. Car ran like crap with the 180. Maybe because it was tuned with a 160. Anyway a 160 or 170 with fan settings should do you fine. IMHO

I’m not sure I understand this statement. My car runs consistently quicker and faster at the drag strip with a low temp thermostat and coolant temperatures 178-180 degrees as opposed to 192-195 degrees with the stock thermostat

The LS1 does not run it's best quarter times when the coolant temp is hotter, it likes 180-190F.
