I'm 99% sure I have a LS1 intake on my 2000 (can't imagine the PO swapped it out). I'm about to do the whole h/c swap and was plannign on upgrading to the Z06 intake man. The casting # on mine is 12556333. Where can I go to confirm this is NOT a Z06 intake man just to be sure I don't waste my $$$?

Forget the casting number(s) as they are not related to the actual part numbers at all.
The best way for you to tell is: if you have the small steel water line that runs under the manifold (from back to front) and joins the front line that runs side-to-side, you do not have the Z06 version. The Z06 manifold is deeper and prevents this style line from being used and only has the front "side-to-side" line. It also uses two plugs in the rear to plug the holes used by the other version.

While doing the swap pull the manifold off and look at the bottom. The LS6 will be flat and the LS1 will have a bow in it. If your car is stock then the above advice would help but some have actually dremeled a place for the LS1 lines to fit under the LS6 intake, making it hard to tell.

Problem here is, the number molded into the manifolds themselves is not the part number. It's a "casting" number or, some call it an "engineering" number and cannot be correlated to a part number, even by the folks in a parts dept at a dealership.
