It really depends on the design of the tire. Tires with a large radius curve from the sidewall to the tread will fit on narrower wheels without as much distortion of the tread. The manufacturer will specify what minimum size wheel works best for each size tire. That said... 275's are stock, 285's are pretty safe, and some people are using 295's happily. Chevy feels the Goodyear tires used on the Z06 (295's) should be used on wider wheels than stock on 'verts and coupes. I'm using Dunlop SP 8000's, 285 width with good traction and no abnormal wear patterns. :cheers:
