nitrogen
Won't matter.
Don't pay too much for it.
Way over priced through tire outlets.
Talk to your local welding supply store, they can help you.
(I sell industrial gases.)
I think there could be some advantage to it.
Pure Nitrogen has larger molecules and is very dry, no moisture.
However I do not use it, even though I can get it at cost.
Too much trouble, air compressor much eaiser.
But the above comments are correct 78 % nitrogen in atmosphere.
Unless the tire shop mounts the tires within a controlled atmosphere glove box, the air in the tire is whatever the atmosphere is. Adding straight nitrogen to that moist air will change the percentages, but not by a whole lot.
You'd need to cycle purge the tire about 10 times to get all the air out...but as soon as the pressure dropped below atmospheric by a significant amount, the bead would likely break.
