Some thoughts:
* If the engine has been cammed, for example, then returning to the "stock" settings may not be a good option .... especially if it has an "aggressive" cam in it.
* Unless you have a list of what parameters were changed in the tune, and what the stock values are for those parameters, it will be pretty time consuming to go through and "detune" the PCM with a handheld.
* If you really want to return to stock, I'd recommend taking the car to a dealer and have them reload the PCM using a Tech2 scanner. The scanner will, based on your VIN number, select the correct software for your PCM and reload it into the car.

My question is, If I put a superchip tuner in it, I know that it will also bring it back to stock, so, if I decide to use a superchip tuner, will it harm the car in anyway?
and, if there are better one's out there for HorsePower and fuel mileage, what are they?

There are lots of tuning tools out there (Hypertech, Autotap, etc.). More "sophisticated" ones allow you to look at (and alter) many more parameters than the Superchips device, BUT, they also expect that you have some idea of what happens when you mess with fuel maps etc.
As far as "harming" the car ...
Be aware that in some states some "tunes" may cause you to fail smog testing, I have no idea how stringent your state's testing is, nor how "aggresive" the superchips tune is.
While it is unlikely there will be new PCM programming from GM for the C5 generation, you want to make sure your car has the "latest" PCM programming in it before using the Superchips device. For example there are updates for the PCM that are part of the "Steering Column Lock" recall campaign. If these updates have not been applied, and a dealer applies them AFTER you've used the superchips tuner, you will not only possibly loose the "tune", but also from what I recall the Superchips tuner will "lock out" from the car because it will recognize that its "stock" files no longer match the current PCM "stock" files.
