The OEM wheel and tire sizes for C5 and Z06s are:
C5:
Front: 17x8.5" - 245/45/17
Rear: 18x9.5" - 275/40/18
Z06:
Front: 17x9.5" - 265/40/17
Rear: 18x10.5" - 295/35/18
C5:
Front: 17x8.5" - 245/45/17
Rear: 18x9.5" - 275/40/18
Z06:
Front: 17x9.5" - 265/40/17
Rear: 18x10.5" - 295/35/18

I'm guessing tha the Z06 rim sizes will fit the coupe as a direct bolt-on? Also, will the smaller size tires (width) fit the Z06 rims? Basically could I put my stock tires on Z06 rims?

There is no calculation per se, although after a time you will certainly get a sense of what size tire goes with what size wheel. Your best way of knowing is checking the tire manufacturer's specs - they will give you the range of wheel widths that will fit a given tire.

Z06 wheels will fit a coupe no problemo. You could put the coupe-size tires on a Z06-width wheel (as in it is possible), but I doubt you would find anyone who would say this is an ideal setup, or even recommended.
