O k, Im sure its been discussed before, humor me and save me the
research. I havea a C5 w/Corsa exhaust and x-pipe and Im going to install a shorty header set. Question - Is there much advantage or any disavantage to eliminating the cats. High performance cats are so expensive and not an option I have given much thought to. I have heard the exhaust will smell more, but Im not going to sniff it.

Not sure if you use your Vette as a daily driver, strictly on weekends, off-road use only, still on factory or extended warranty, etc.
I would not recommend deleting cats unless you are going off-road use only with your car. High-flows would be you best bet IMHO. I am sure others will chime in.

I have LG's, x-pipe, no cats, and Coras Pace Car and love the sound. It is my daily driver and I dont take it off road. You will smell the gas but its not that bad. Only time I will smell it is when Im stopped and I dont always smell it then. There is probably not a real big performance difference between high flow cats and no cats. The cats will make it quieter though if you dont want it really loud.
