806 are perimeter-bolt heads and were used in 97-98 cars.
99 and 00 had 853 (center-bolt) heads.
01/newer LS1s had the 241s (also center-bolt).
There may have been some design/flow improvements along the way with each casting #, not a lot of consistent info out there for me to say definitively.
Not many fuss over stock LS1 heads anyways or port/modify them.
LS6 (243) or 5.3 (862, 706) heads are the preferred heads to start with for porting/modifying purposes. Large chamber 6.0 heads (317 and 035) are also popular heads to port/modify for the boosted crowd looking to lower compression ratio.
