Don't know about the Z06 but on my 03 A4 I just push the guages button until it shows the Trans Fluid Temp. It stays on trans temp all the time if I don't push the button again. If I go to fuel or trip or some other button and then back to guages the trans temp is still there.
^ No, no problem. It really depends on the track, driving style, and weather.
I run Amsoil and have my exhaust ceramic coated so Ive never seen it. But my fathers Z16 on stock fluid all stock would get it after 20 min. We wrapped the exhaust in header wrap where it passes under the trans and swapped to Amsoil.
This past weekend at Vipredays at VIR it took 55 min of hard driving in 95 degree weather to see the high trans temp warning. We were drivin the car back to back in 30 min session because our Panozs fuel pump failed.

So, what is considered hot?, by that I mean at what temp do you see a warning?
Set the trans temp warning lower in the PCM so it comes up earlier... only downside is you would get a warning message when theres no real warning. Not sure if you can make it accessible like it is in an A4.
