Can't remember what the stock fan settings are. I installed a 180* thermostat and I reset my fans like this, Fan 1 on at 186* off at 179* Fan 2 on at 195* off at 187*
That may give you some idea where to start with a 160*
My car runs from 189* to 192* depending on RPM and at idle with the air on it never exceeds 198*
If you do some searching you will find you can modify your stock thermostat to open at lower temps. The info I remember seeing said to use a brass ferrel and it gave the length the file it down for the temperature you wanted it to open at. This mod would save you the $50. to $60. a new low temp stat would set you back. I'm going to modify my old stat to open at 160* and see how I like it. I also read a small article on this same mod in a book at Books A Million, "LS1 Performance Tips" or something similar.
