I had the same issue with the K&N... It was actually the lowest part on the underside of the car. I thought about just cutting it off before installation....but it seemed easier to just use a M1 filter instead.
I worked for a rental car agency back in 77 and we had a Firebird come in from Los Angeles to Long Beach with no Oil Pressure. The Instrument panel was lite up like Christmas so someone had to have seen all the bad things happening. The filter was about three turns from falling off. It happens! Since it's a rental no one cared. but the 350CID engine never lost a beat. Can't make ther same remark about an LS1, however. The F/B is doing a cover-up. Check the codes?
I don't see why everyone is getting in a mess over this.
1) The oil filter was somehow "ripped" off. Call up your insurance company and have it covered.
2) The boyfriend seems to know it is his responsibility to get this fixed. Props to him. Even if it did rip off, you would have noticed oil pressure drop pretty fast. These engines are exactly the weakest things made, I know more then one person who accidentally started cars with no oil in them before and they are fine. (Short time of course.)
3) Your choice of engine replacement. Just for fun, I would pull the plugs and put some penetrating oil in the cylinders. Let that sit and work in for a few days, then try turning it over with a large breaker bar. If it turns, put back the plugs and see if it runs. Why not you're not going to hurt anything!!
If the engine is indeed smoked, you can buy used LS1s for ~1500 complete. If you wanted to go a cheaper route buy an iron block truck motor. Those can be had for ~500. Look for a 6.0L truck motor and have a shop put that in. Now you have a car, that performs the same (almost) and possibly bank ~2K form insurance. Win Win.
Something VERY FISHY Maybe not, but I can tell you in over 34+ years of being in the auto business I've NEVER seen an oil filter blow off if the right one was put on.
I have seen it happen a couple of times, though not on a C5. Bypass valve was stuck and Oil pressure was like 130. Blew the filter right off.
Are you positive you had the correct filter? The correct filter is only a few inches long and does not protrude beyond the oil pan. However, longer filters are common and will fit just fine ( actually, they would be easier to install, because you have something to readily grip onto). One time took my C5 to one of those 10 minute oil change places, and they put in a filter that was 2" too long. The bottom of these cars are already scraping the ground, a too long filter is begging for trouble. ( Fortunately I noticed the long filter, and have changed my own oil since )

I worked on a 79 Merc Cougar that came in with a complaint of leaking oil filter. It was also leaking oil from the passenger side trunk. Popped the trunk and there were 3 more exploded filters. Hmm. We put a new one on and it literally exploded. Turned out it was the oil pump.
Car ran like a champ.
I'd buy a used LS1 and install that. Look for low miles. A rear impact would be a good choice. $1500. should be about right.

I don't know about the insur Co but it worth a try. As far as the BF goes, "**** happens" your sister trusts him w/her car and he's willing to pay for the damages so 'nuff said' about the guy. He's ok my me. And who among us hasn't beat on our vette or a friends vette. If it breaks we pay to have it repaired better and up-graded. So we can beat on it another day....
Now for the more important stuff. This is your sisters vette. I wouldn't put a used motor in it. No way. A rebuilt from a well know performance shop or a new crate motor, that's it no . If you have to add a few more $$ to fix it right do it. She's your sister take care of her & her vette.
First thing I would do is call the insurance company. This is catastrophic damage, above and beyond the wear and tear on the car. If you were in a collision and it damaged the engine, they would fix that. Clearly this is a condition along those lines. Would go from there...
As for junkyard motors, I would think a shop should be able to install a junkyard motor for you AND give the assembly a warranty. If it were me, to trust person X to build an LS motor for me, not going to happen. There are just too many things the LS motors have differently than other motors (for starters, most shops won't have the rear main seal installation tool). Its just messing around to me. I'd buy a warranteed used motor (just like the insurance company would do) and have them warranty the labor on install. As close to insurance of a good job you are going to get.
Good luck, so sorry it happened. If you wanted to save a few bucks, call your local high school auto shop teacher and see if they'll do the swap for you. Kids would love it, and they stand behind their work too.
Nobody else mentioned this, so I will... It's possible that when the oil filter parted company with the engine, the zero oil pressure tripped the fuel pump switch and MAY have saved your engine. Id at least put on a new filter and refill it with oil and make sure you have a problem. Chuck.
Ive seen bad filters last under normal operations that his sister was driving, but when the boy friend drove the car and driving it hard the increased pressure blowed the filter apart. We have had hummers in the USMC do that in the past. I just put a long block in, 3900 for crate engine and 1800 for labor at dealer to take mine out and replace with new one . Good luck.
