I am in the process of putting Eradi Speed rotors and Z06 calipers on. My question is when I bleed the brakes should I use the dot 5.1 brake fluid I got with the brake kit or dot 3 like the owners manual says?????

DOT 5.1 is an extension (higher standard) of the DOT 4, 3 standard and should be fine. Just to confuse all of us, DOT 5.0 is not compatible and should never be used with anti-lock brakes.
If you are going to run the car hard, I'd suggest you flush the fluid and usd Motul600. You can find it at most motorcycle shops. I had to upgrade to it after I boiled my brake fluid in a driving class.
The Fluid Supplied is Delphi Lockheed Brake & Clutch Fluid Dot 5.1 ABS. It comes in a yellow plastic bottle (500ml). Is o.k. to mix this with the stock brake fluid??
DOT5 does not mix with DOT3 because it is silicone based and DOT3 is organic petrolium based. I believe DOT4 is a synthetic version of DOT3 and can be used interchangably on a DOT3 system.

DOT 5.1 is not DOT 5. DOT5 is silicone fluid and should not be used. DOT5.1 is totally different and is compatible with DOT4 and DOT3. However in any case a total flush of brake fluid is advisable as it only is good for 2 years or so.
As to synthetic or non synthetic, there is no standard in the DOT specs, and I'm not sure what a synthetic or non-synthetic brake fluid would be.
Never use DOT5 in a vehicle with ABS brakes. DOT 5.1 is an extended spec of DOT3/4 fluid. As I said, this is very confusing and they never should have done this.
I don't know fluid that was supplied with the kit, did they provide specs? In general, 5.1 will exceed DOT4 specs.
MOTUL makes an excellent DOT 5.1. The dry boil point isn't quite as high as the 600 but it doesn't absorb water quite as easily. If you track the car you'll be changing fluid and bleeding often so go with the 600. If you are a normal street driver that likes to roast the barkes on occasion, but don't change the fluid every year or so, the 5.1 MOTUL will be an excellent choice.
