Adding Freon, is there a secret?

I always just fix the problem, make sure there is no high side pressure and add freon to the low side until the pressure gauge read out is correct.
Worked fine on my C5 after the compressor went out ~30K miles blowing cold.
Worked fine when my condenser broke on my M3 ~50K miles blowing cold.
Worked fine when I rebuild my Crown Victoria ~10K miles blowing cold.

True professionals and those who want to do it right will evacuate, leak test, and add the amount of gas by weight, if you want to get it right by looking at pressures, you better have a thermodynamics book, calculator, basic weather station read out, and pad of paper, that's why the best way in the shop or at home is the first mentioned method.

Maybe change out the air in your tires for fresh air too!
