I usually only drive the Vette Fri-Sun, and on the start-up sometimes it is slow (5-10 sec) for the oil pressure to jump up. Today on the highway i was cruising at 75 and the low oil pressure warning came on twice when it went from 60-20. When I originally bought the car the oil pressure gauge would be buried at 110 - 120 much of the time. So is this a real issue or just the sensor going bad??

Oil Pressure Sensors going bad are a notorious problem on the C5. Usually they go bad on the high side but many go bad reading low.
Did you hear any engine noises when the pressure was low? If not the sensor is likely going bad. Here is a link to a similar question a few days back:
No sounds, just the quick warning then it goes away. Oil level is good, no leaks, smells, or smoke and it usually only happens the first day I start it up after it sat awhile.
Though I am not a C5 expert my experence with GM engines tells me it is not likely the oil pressure was ever 120. Mine runs 30-40 while crusing after the engine gets warm.

If you had 110-120psi when you bought the car the sensor was bad then!
Normal pressure should be 30-40psi when hot.
do some research on the sending unit. Alot of guys have had issue with GM's replacement. They went away from the brass unit and decided on aluminun. Some guys have had luck others not so much. Some have had it fail again in a matter of months....After searching and reading about more than a comfortable level of people having issues again with the aluminum replacement, i set out to find a brass one. Here is what i ended up finding. A little more than what you would pay for the aluminum but worth it considering where that sensor is located....
