Cooling temp
In C5 Tech, use search or search this forum, (in the red banner). Use keywords "on off fan settings" or similar. You will find numerous past threads. This is just one...

If you car is overheating, remember that it's a "bottom feeder", in that most of the incoming air comes up from the bottom of the radiator. The center air dam diverts the air upwards. The rest of the air comes in from the front fascia openings. The C5 LSx motor was engineered to perform at higher temperatures than the sbc of yesteryear.
It's not a concern as long as the temperatures go back down when the car is moving. You can turn on the a/c if you want the fan(s) to come on sooner. Personally, I watch the oil temperature more than I do the coolant temperature.
FYI, make sure there's nothing blocking the radiator core/ac condenser. The C5 is notorious for sucking up leaves/sand/plastic bags/roadkill, etc which blocks the air flow.
