You will see a temperature drop in the cockpit. I didn't notice any stiffer chassis but I imagine you'd have to really push the cars limits to need that benefit. Not sure what you're asking about the headers. I have long tubes and noticed a bit of a gain. The sound is much better. The time to do the plate would be the same time you do the headers or clutch. Also it's a good time to do the fuel filter when you have the exhaust out for any reason.
A tune will get you the maximum benefit from the headers. In my case I'm building in baby steps and the tune will come after the heads and cam get done.
